    Pickles!

    I put pickles on nearly everything I eat, but I've never made them myself. Anyone have any recommended recipes?

    Barring that, anyone have any favorite pickle brands I should try? I like them super crunchy so I usually go for local, or at least refrigerated options.

    Extra points for spicy pickles.

    My favorite pickles I've ever had were from Moishes which is a steakhouse in Montreal. They used to sell their pickles in Costco. They tasted like corned beef/pastrami so I'd imagine they were pickled in the same brine.

      My wife just made some pickles yesterday with the cucumbers that don't stop coming actually. Pretty easy "summer quick pickle" recipe she google'd up. She got a pickling spice pack from the grocery store (anise, allspice, dill, garlic, peppercorns), some fresh dill, garlic, and dried mustard seed and boiled that in some apple cider vinegar with sugar and salt. She let the brine cool a bit then poured it in the jars full of cucumber spears. Not bad for a first try, second batch she added grainy honey mustard and more sugar and cut them in circles like bread and butter pickles. For long term canning and preserving you should use a proper canning setup so that everything is sterilized. These ones are probably only good for a month or two, but i doubt they'll last that long.

        Quickles are fine for me, I tend to keep them in the fridge and as you imply, they don't last.

      My family likes the pickles from Aldi, the "fresh" ones that are in the refrigerated section, in a clear plastic container. Definitely crisp-er than the ones in glass jars on the shelf, and no yellow dye.

      "I made a brine first of just really salty filtered water that I soaked the whole cucumber in overnight with the ends cut off...then I made a 1:1:1 ratio of that brine, water and apple cider vinegar, sliced the pickles like hamburger pickles put them in the jar, covered them with the 1:1:1 mix then added a couple pinches of peppercorns, mustard seed and dill."

      Grillo's is supposed to be good pickles, I'm not a pickle guy myself. but we can't keep Grillo's in stock in the summer

        It's tough because I'm basically looking for the crunch of a fresh cucumber, but with intense pickle flavor.

      I made a batch of refrigerator pickles last week and they came out pretty damn good. Nice and crunchy.

      1 cup white vinegar
      1/4 cup apple cider vinegar
      3 tbsp salt
      2 tbsp sugar
      2 cups cold water
      dill
      garlic cloves crushed
      peppercorns
      6-8 pickling cucumbers

      2 qt mason jars

      Bring the vinegar, salt and sugar to a boil to melt sugar and salt, remove from heat and add cold water
      Cut cucumbers into spears and add to mason jars
      I like a lot of dill and probably used about 2 tbsp or peppercorns and 3 cloves of garlic per jar
      Fill with liquid and let sit in fridge for a few days
