    i am get wood chips can i mix and match them

    as of right now i have apple cherry jack Daniels Mesquite. looking to get peach and maple along with Crown Royal Whiskey Barrel Chips and bundles from maclean's outdoor. want to season the grill with the wood chips. waiting to get peach and maple but will get maclean's outdoor bundle Maple Bourbon, Apple Rum, Bourbon Blend, and BBQ Rum with Bourbon, Rum, Scotch barrel flavor

      I quite often mix a small amount of Hickory with Apple to just up the smoke without going full bore Hickory.

        Im not a smoker at this time, but I talk it with the guys at work. We were just talking about his today.

        I was advised to use mainly a fruit wood like cherry or apple, then mix in a small amount of hickory, or even mesquite chips for a subtle hickory accent.

          Pecan is also excellent smoking wood, being related to hickory. Both shed limbs naturally, so if you know where they live in the fall it's ready wood after you get the bark off (for most people).

            I like pecan for beef, nice taste (smokey) without being too strong. Fruit wood for pork and chicken for me with just a little hickory mixed in.

          Oh, and yes. Mix and match for sure. Some people have their secret recipe chip mix.

          My family used to have a pecan orchard, so I tend to like everything with pecan smoke.

            Blends are common - if you look at the bags of pellets (Traeger, Weber) they have some good ideas about what might go well together for different meats.

            I've begun to use straight mesquite for almost everything. It adds a lot of spice, but it's great on chicken thighs and brisket, and not half bad for pork, if a bit overpowering. Not that pork has much innate flavor, regardless... People told me to use mild wood for mild meat, but my normal recipe is just salt, pepper, mesquite smoke, anymore. Brined overnight in broth (and sometimes an additional flavor or two) tends to round out the equation.
