Maybe this is a dumb question, but I have zero experience with this kind of stuff. Emeks don't need trigger return springs, right? I've been looking at the Emek firing cycle animation on YouTube, but I can't figure out how the 3-way valve shaft returns to its resting position after the trigger is released. Could anyone shed some light on how this works?

This is correct. Some people remove their springs and the marker still works fine. Personally, I use a cut down pen spring to make mine lighter, but still have a bit stronger return than without one. It's really personal preference. Just don't buy into the hype around aftermarket springs. You already have plenty hanging around in your junk drawer.

Some don’t run trigger return springs. I do for reliability reasons. My emek is my go to Mech for Tournament play. I can’t have the thing chuff when it should be going pew.
Just put a light spring out of the junk drawer like JonM suggested. They work without springs, but I definitely prefer a lil feedback.

according to jack, it wont be as light, or as short, because they want to err on the side of reliability, but it will still be a drastic improvement over stock

Hmm. What are the odds it'll work in a Gmek...?
