I'd probably try brass shim stock just because I have it, but even a section of soda can would probably work. Or maybe some high durometer 1/16-1/8" rubber sheet and non-marring screws.
Another alternative to the plastic-tipped spade thumbscrews is plastic-tipped Allen screws with a knob cap pressed on. Then you have the option of different styles and colors.

If you can cut or stamp a little bit of brass or nylon, you can drop it down the hole and use it as a wedge between the tank and the screw. That'll work pretty well. Just don't forget about it, because they'll drop out when you remove the tank.
If you're careful with a hot glue gun, you could put a small bead on the tip of the screw. It'll probably peel off once you tighten it, but should work fine until you need to remove the tank.
