The more common definition that I've experienced (recball in East and West Coast USA, and the UK) is Each team having their own flag and retrieving the oppositions flag while defending your own. The centered, single-flag setup I've seen is usually (at least in the US) referred to as "football" or "Center Flag".

As for different formats: A field in my area operated several non-traditional paintball matches (in addition to Full auto being standard and, allowing respawns in all their games):
The most different was referred to as "King of the Hill", I believe it was inspired by a particular Halo match/map type. The idea is that two teams start at opposite ends of a smallish, speedball style field (lots of bunkers). In the center of the field, there is an ~ 8ft-wide octagon with low walls (no taller than 3'), and the only breaks in the wall are on the two lateral sides. The first team to have someone occupy the octagon for a continuous two minutes wins. Players can respawn at their starting locations. This was an intense fight usually done at the end of the day.

They ran the usual attack and defends but most significantly, all of them (on different 'courses') clearly favored the defenders (i.e. a two story structure) and, they allowed attackers to respawn twice as fast as defenders.

Another notable one was "VIP escort. The two teams start at opposite ends of a long field. A ref is picked as the VIP, starts with the Escorts at one end of the field. The VIP is unarmed, wearing a safety vest, and must make it to a structure at the other end of the field for the escorts to win. The terrorists start at the other end of the field except for one person who can start at the other team's 30yd (equivalent) line (presumably hidden), I can't recall if they had respawns on this game. If the VIP is marked on the vest, the terrorists win.

Western wars- this requires a large field with lots of structures. In this case it was EMR before it went to crap. Point of the field chosen at random buy the refs were turned into capture points. You had to flush the other team out with unlimited respawns, and take a small structure in an allotted amount of time. The ref would then hand everyone that could fit in the bunker gold Mardi Gras beads that could be turned in for points. At the time the field used them to give out raffle tickets for prizes. Players would then have to go to respawn to take the next objective chosen at random. It was probably one of the most fun non traditional games I have played. Mid day people were walking around like they had gangster chains on because they played the objective. This was a secondary game to a larger more popular one. But I always thought it was one of there best games and they only ran it one or two times. I don’t think it sold much paint because pump and pistols were encouraged with double points. It played really good at the time. Big field moderate numbers. It really encouraged movement and lots of gun battles. Definitely my all time favorite game at EMR. Unfortunately shooting at dark windows all day sells more paint.
