As for different formats: A field in my area operated several non-traditional paintball matches (in addition to Full auto being standard and, allowing respawns in all their games):
The most different was referred to as "King of the Hill", I believe it was inspired by a particular Halo match/map type. The idea is that two teams start at opposite ends of a smallish, speedball style field (lots of bunkers). In the center of the field, there is an ~ 8ft-wide octagon with low walls (no taller than 3'), and the only breaks in the wall are on the two lateral sides. The first team to have someone occupy the octagon for a continuous two minutes wins. Players can respawn at their starting locations. This was an intense fight usually done at the end of the day.
They ran the usual attack and defends but most significantly, all of them (on different 'courses') clearly favored the defenders (i.e. a two story structure) and, they allowed attackers to respawn twice as fast as defenders.
Another notable one was "VIP escort. The two teams start at opposite ends of a long field. A ref is picked as the VIP, starts with the Escorts at one end of the field. The VIP is unarmed, wearing a safety vest, and must make it to a structure at the other end of the field for the escorts to win. The terrorists start at the other end of the field except for one person who can start at the other team's 30yd (equivalent) line (presumably hidden), I can't recall if they had respawns on this game. If the VIP is marked on the vest, the terrorists win.
