    Anyone else in their pizza making phase?

    Been having a blast! We’re using a small wood and charcoal fired Ooni outdoor oven, making little Neapolitan pizzas. I’m finally nailing a direct dough recipe, so I’m eying poolish/biga recipes. Anyone else?

    Homemade pizza is the best. I like going straight on the BBQ for a crispy crust. What toppings are you rolling with.

      I’ve been keeping it fairly simple with a DOP San Marzano tomato sauce, fresh mozz, a lil basil and a dash of EVOO, for the most part.

      We’ve done some fun ones, though. The classic white pizza is always a hit: a brush of fresh garlic and EVOO, shredded mozz, fresh mozz, a few dollops of ricotta, some DOP pecorino Romano, and Bob’s your uncle!

      Shaved prosciutto, fresh arugula, and a little hot honey is killer, too.

      We have a thriving fig tree that’s about to drop a few lbs of ripe fruit, so I’m going to try and incorporate those in a recipe.

      My main focus so far has been A) fire management, and B) nailing a simple dough. Now that I’ve had a repeatably solid direct dough recipe, I’ll prob do some weird stuff.

      How about you? I’d love to hear some recipes!

        Fresh figs are perfect. Some EVO fresh garlic , fresh figs , caramelized onions and goat cheese.

        Fire roasted tomatoes with artichoke hearts , roasted papers and ricotta

        Margarita of course.

      I like a good traditional pizza. KISS method with some good pepperoni and fresh garlic.

      I'm in my beekeeping age... but mainly because I want to bang my daughters hot friend!

      Oh a serious note, my friend Chad (Keelnahan) is in his pizza making phase, and brought us a pretty good pizza to the field last week.

        White pizza with way too much cheese every time. The wife cracks an egg over hers and puts on far too many veggies and crap.

          This is the last one I made and has also been my best homemade one up to this point. Just oven baked but one day I’ll talk myself into a dedicated pizza oven. All comes down to the crust and sauce in my opinion.

          mozzarella
          fresh jalepeno
          onion
          italian sausage
          pepperoni
          hot honey drizzled on top

            Thanks, it was! I used a dough kit from my local grocery store that has the flour and yeast. Just prep it about 45min beforehand to let it rise a bit in a sealed bowl. Oven was at 450 for about 20min.

          During covid the wife started making sourdough and one of her go to recipes was pizza dough. We still make homemade pizza fairly regularly, but just in the regular oven at 500 on the pizza stove. The kids love Margherita and I stick with good old cheese and spicy Italian sausage.

            These are a few of my pizzas I've made recently. Still no pizza oven 😢 BUT my neighbor is an electrician and tech nerd so we MAYY have discovered how to hot wire the oven to heat past 500...now it's no pizza oven but 700 is just a bit better than 500!

              My two contributions to this,

              1. I got a 1/4 inch 12x14 pizza steel and leave it in the oven at all times. it's great for pizzas, but it's also fantastic to take out and use on the grill, and helps regulate the oven temperature. Do recommend

              2. Rueben Pizza. Thousand island and creamy horseradish blend sauce, pressed sauerkraut (I pre-broil mine to get moisture out), heavy Swiss in the cheese mix. Chef's kiss

                Following up, made a nice 2 day cold ferment dough, mix of Jarlsburg and Swiss, really drained the kraut and it turned out excellent!

                My wife is also not a big fan of corned beef, this is now going to be a regular dinner when she's out of town! Thank you for the recommendation!
