Been having a blast! We’re using a small wood and charcoal fired Ooni outdoor oven, making little Neapolitan pizzas. I’m finally nailing a direct dough recipe, so I’m eying poolish/biga recipes. Anyone else?

Homemade pizza is the best. I like going straight on the BBQ for a crispy crust. What toppings are you rolling with.

I’ve been keeping it fairly simple with a DOP San Marzano tomato sauce, fresh mozz, a lil basil and a dash of EVOO, for the most part.
We’ve done some fun ones, though. The classic white pizza is always a hit: a brush of fresh garlic and EVOO, shredded mozz, fresh mozz, a few dollops of ricotta, some DOP pecorino Romano, and Bob’s your uncle!
Shaved prosciutto, fresh arugula, and a little hot honey is killer, too.
We have a thriving fig tree that’s about to drop a few lbs of ripe fruit, so I’m going to try and incorporate those in a recipe.
My main focus so far has been A) fire management, and B) nailing a simple dough. Now that I’ve had a repeatably solid direct dough recipe, I’ll prob do some weird stuff.

During covid the wife started making sourdough and one of her go to recipes was pizza dough. We still make homemade pizza fairly regularly, but just in the regular oven at 500 on the pizza stove. The kids love Margherita and I stick with good old cheese and spicy Italian sausage.Comment

My two contributions to this,
1. I got a 1/4 inch 12x14 pizza steel and leave it in the oven at all times. it's great for pizzas, but it's also fantastic to take out and use on the grill, and helps regulate the oven temperature. Do recommend

Following up, made a nice 2 day cold ferment dough, mix of Jarlsburg and Swiss, really drained the kraut and it turned out excellent!
My wife is also not a big fan of corned beef, this is now going to be a regular dinner when she's out of town! Thank you for the recommendation!
