I replaced the gauge on my Pro V2 reg a couple weeks ago and used some Permatex Thread Sealant. Get out to the field and it is leaking at the gauge, so when I get home I take the gauge off and slap on some Teflon tape, but it is still leaking. From what I can tell the leak is at the threads and not the gauge. So stupid question- do I just need more tape, or is there potentially an issue with the threading of the gauge / reg that is causing the leak?

If you can get some air it may be worth spritzing some soapy water in the area of suspicion to try and better isolate exactly where the issue is coming from.
You made it sound like you replaced the existing gauge with a new one.. you might also try putting the old one back on and see if the issue persists.
The idea you're not using enough teflon when I'd wager this isn't your first teflon usage makes me think it's something else with the gauge itself.

More then likely it’s a bad gage assuming you used enough thread tape. If it vents from the back side of the gage itself threw the pressure relief port it’s a bad gage. I have smashed the glass off gages and they still hold pressure. Those small gage’s are notorious for being inaccurate and pore quality.
You have to be careful not to over tighten them to.

Either that pin hole on the back or I would really closely check your burst disks as well. I've had it before where I thought it was the gauge but it turned out to be the burst disc threads on the gauge side.
If you have a second tank and a remote line with a quick disconnect you can connect the tanks and put 800ish psi in the leaky one to track down that leak.
A bathtub full of water will help as well
