I am in search of a tiny high-pressure solenoid valve capable of withstanding the pressure of a 12-gram Co2 cartridge or more. I'd love to run it off a 9V battery or two but as space is limited the fewer batteries I need to power this the better. Even if you can help point me in the right direction that would be greatly appreciated!

800psi, micro? I'd be surprised if they exist.
You'll need to regulate it somehow or come up with a different design.

CO2 isn't solenoid valve friendly. The liquid phase transition wreaks havoc on seals.
I'd consider something like an MQ or uprising frame. Use a solenoid plunger to drive your valve, instead of using an off- the- shelf valve. Then you can design for the pressure, and build in a relief and account for thermal shocks.Feedback

You might need to use a pilot driven solenoid where you are regulating the air down to push a pilot valve to trigger a 5-way valve.Comment
